“Unstuffed Cabbage” Meatballs
Recipe contributed by Miriam Feinberg. This family recipe is easier to make than stuffed cabbage, but incorporates similar flavors.
- ½ cup rice
- 1 pound ground beef
- 1 cup breadcrumbs
- ½ cup water
- ¼ teaspoon ground black pepper
- 1 cup ketchup
- 1 cup ginger ale
- 1 small green cabbage, finely shredded
- Cook rice until it’s almost done, but still slightly hard. Cool. Thoroughly mix together rice, ground beef, breadcrumbs and water, and set aside. Combine ketchup and ginger ale in a deep pot and set over low heat until bubbling. Add cabbage and continue to cook over low heat for about 10 minutes. Form small balls of meat mixture and drop them into the cabbage sauce. Do not stir! Cover and cook for 30 minutes.
