Lentil Walnut Pate

Lentil Walnut Pate Related:   appetizer, vegan, vegetarian

Prep time: 15 min

Cook time: 1 hr

Yield: 2 cups

You might not believe it, but this recipe really does end up tasting like chopped liver! It is a delicious, healthy and easy appetizer for vegetarians and meat-eaters alike.

  • 2 really large yellow onions
  • 1 smaller red onion
  • 3/4 cup walnuts
  • 2 cups lentils, cooked on the dry side
  • 1-2 teaspoons tamari sauce
  • About 2 tablespoons olive oil

Slice the onions and sauté SLOWLY in olive oil for a long time, an hour is good. Why? This gives the flavor we want. Lightly toast the walnuts in a skillet for a few minutes for better flavor. Put the onions, walnuts and lentils (no liquid) into a food processor fitted with the steel blade. Your choice to leave the mixture a bit chunky or go for smooth. Mix in the tamari (or soy sauce). Serve with rye bread, crackers or in "cups" of Romaine lettuce.
