Last summer, I stumbled upon this recipe for ripe tomatoes. It is incredibly simple, but I think it will exceed your expectations. Simply blend farm-fresh tomatoes with olive oil and enjoy as a juice, a fresh sauce for pasta or the base of a salad dressing. It is the fastest way to clear out a bowl of tomatoes to make way for your next picking.

Ingredients

  • 3 cups ripe tomatoes of any variety
  • 2 tablespoons quality olive oil
  • 1 tablespoon lemon juice (optional)
  • Pinch of salt (optional)

Preparation

  • Place tomatoes and olive oil in a blender. Large tomatoes should be quartered; smaller tomatoes should be sliced in half or placed in the blender whole. Add lemon juice and salt if using. Blend for 1 to 2 minutes until smooth and frothy. Blended tomatoes make a great drink, simply add ice and a squeeze of lemon and serve immediately. They can also be used as a raw tomato sauce and served with pasta, fresh garden vegetables and basil.
