Curly Oven Potato Chips

Prep time: 5 minutes

Cook time: 25–35 minutes depending on size of potato

Yield: 1 adult serving or 2 servings for children

My oldest daughter, Meirav, age 12, created these curly oven potato chips. She loves to bring them as snacks to school and can make them on her own. Other root vegetables such as beets, sweet potatoes and carrots would also be delicious.

Ingredients

  • 1 medium potato
  • Salt, pepper and paprika to taste
  • 1 teaspoon olive oil
  • Special equipment: spiralizer

Preparation

  • Preheat oven to 350 degrees. Prepare a flat glass casserole or baking sheet with a spray of olive oil. Spiralize potato. Sprinkle with salt, pepper and paprika to taste. Add olive oil, and rub spices over potatoes. Bake for approximately 25 minutes or until chips are just browned. Store in the refrigerator to enjoy at school tomorrow.
