Crockpot Curried Beef with Apricots
In this simple recipe, the apricots mostly disintegrate, creating a rich slightly sweet, tangy base for the rich, savory meat.
- 1½ pounds pastured stew meat
- 1 tablespoon of mother-in-law masala or other curry blend
- 4 small onions, peeled, but left whole
- 5 small cloves garlic, peeled, but left whole
- A handful dried apricots
- 2 cups beef or other broth
