Jason GoodwinJason Goodwin is an English novelist, traveler and historian who has written about the Far East and about walking 2,000 miles to Istanbul. His Istanbul-based series of historical thrillers began with The Janissary Tree, winner of the Edgar Award for Best Novel. Translated into over 40 languages, the five-novel series now has its own illustrated cookbook, Yashim Cooks Istanbul: Culinary Adventures in the Ottoman Kitchen.

Fish Poached in Paper

This recipe is quick, easy and very tasty. There’s a lot to be said for cooking with paper and string, in cartoccio. Your little parcels will seal in flavor and they look incredibly enticing on a plate. The surprise is that the parcels aren’t baked, but poached.
