Zucchini and Apples with Honey and Lime

Zucchini and Apples with Honey and Lime

Prep time: 5-10 mins

Cook time: 12-15 mins

Yield: 4 servings as a side dish

While we are not harvesting any apples on our farm right now, we do have the clichéd bumper crop of zucchini, which also relies on pollinators. I am continually experimenting to find recipes my children will appreciate. Here is one that the whole family enjoyed.


  • 3 medium zucchini, sliced into thin disks (a mandoline works well for this)
  • 1 large or 2 small apples, sliced into thin disks
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • Juice from 1 fresh lime
  • 1 pinch of salt (optional)


  • Preheat oven to 450 degrees. Coat oven-safe pan with olive oil and arrange apple and zucchini slices in layers in the pan. Drizzle with olive oil, honey and freshly squeezed lime juice. Add a pinch of salt if desired. Bake for 12 to 15 minutes or until fork tender, depending on the thickness of your slices. This dish can be served as a side dish, and leftovers are great as a salad or layered in a sandwich.
