Zucchini and Apples with Honey and Lime
While we are not harvesting any apples on our farm right now, we do have the clichéd bumper crop of zucchini, which also relies on pollinators. I am continually experimenting to find recipes my children will appreciate. Here is one that the whole family enjoyed.
- 3 medium zucchini, sliced into thin disks (a mandoline works well for this)
- 1 large or 2 small apples, sliced into thin disks
- 2 tablespoons olive oil
- 2 tablespoons honey
- Juice from 1 fresh lime
- 1 pinch of salt (optional)
- Preheat oven to 450 degrees. Coat oven-safe pan with olive oil and arrange apple and zucchini slices in layers in the pan. Drizzle with olive oil, honey and freshly squeezed lime juice. Add a pinch of salt if desired. Bake for 12 to 15 minutes or until fork tender, depending on the thickness of your slices. This dish can be served as a side dish, and leftovers are great as a salad or layered in a sandwich.
