Boxes of seeds are arriving in the mail now, and winter will not be here much longer. In the meantime, we are still working our way through crates of winter vegetables. We are “picking” sweet potatoes from crates piled in our house instead of the ground. And we are discovering the art of winter bakes that remind me of tzimmes.


  • 4 sweet potatoes
  • 3 apples
  • 1 cup dates
  • 3 carrots
  • 3 white potatoes
  • 1 tablespoon coconut oil
  • ¼ cup olive oil
  • ½ teaspoon salt (optional)
  • ½ teaspoon cinnamon (optional)


  • Preheat the oven to 350 degrees. Peel sweet potatoes, potatoes and apples if desired. Chop all ingredients into bite-sized pieces. Slice dates in half and remove pits. Toss chopped fruit and vegetables with oils and optional spices. Bake for about 45 minutes until vegetables are soft. Stir occasionally to keep top moist. Serve warm or at room temperature.
