Watermelon and Feta Salad with Mint

This salad is based on a dish my husband and I shared at a beachfront café in Tel Aviv. Our kids were totally freaked out by the sound of it, but now they clamor to help prepare it.


  • 8-10 1/2-inch slices of watermelon, rind removed
  • 1 4-ounce block of feta cheese, cut into 1/2-inch slices
  • 1/3 cup fresh mint, coarsely chopped
  • Juice of 1 lime


Arrange the watermelon slices on a platter, and place the feta slices between each watermelon layer. Scatter the mint leaves on top and douse with lime juice. Serve chilled.
