  • Compote
  • 3 red plums
  • ¼ cup coconut sugar
  • Pancakes
  • 1 tablespoon ground flaxseeds
  • 3 tablespoons water
  • ½ cup white whole-wheat (or all-purpose) flour
  • ¼ cup rolled oats
  • 2 teaspoons baking powder
  • ¼ cup coconut sugar
  • ¼ cup tahini
  • ¾ cup almond milk
  • Drizzle of olive oil (for pan)


  • Preheat the oven to 400 degrees. To make the compote, chop the plums into small pieces and put in an ovenproof glass dish or pan. Dust with sugar. Bake for 25 to 30 minutes or until they look soft.
  • Meanwhile, make the pancakes. First make the flax egg. Combine 1 tablespoon ground flaxseeds with 3 tablespoons water and let it sit for 5 minutes. Whisk together flour, oats, baking powder and sugar in a bowl. Add in the flax egg, milk and tahini and stir to combine.
  • Heat olive oil in a pan, add about ¼ cup of the batter per pancake and cook until you see bubbles appear on the surface, a few minutes. Flip pancakes and cook until golden. When the plums are done, mash them with a fork to make them more like a compote. Spoon over the oatcakes and enjoy.

    Would love to try your spread and tahini. Just got back from the western Galilee, not too far from Haifa. Can’t wait until our next trip, probably June/July 2018 or Sept/Oct.
    Have been a follower of JFE for almost 1yr. Enjoyed a few recipes, but mostly us them for ideas to modify things I already make.
