Stuffed Chicken

Recipe contributed by Batsheva Gabai. It is common to eat stuffed foods for Sukkot. This dish offers an interesting variation on roasted chicken, as it is stuffed with cooked chicken breast mixed with seasonings.


  • 1 whole chicken
  • 1 chicken breast
  • 2 tablespoons cilantro
  • 1 onion
  • 2 cloves garlic
  • 1 cup canned mushroom pieces, drained
  • 1 teaspoon breadcrumbs
  • 1 tablespoon chicken soup powder
  • Juice of 1 lemon
  • ½ cup olive oil
  • ¼ cup honey
  • 2 tablespoons soy sauce
  • ½ teaspoon white pepper
  • ½ teaspoon cumin
  • 1 teaspoon salt


  • Preheat oven to 400 degrees. Put the whole chicken in a large baking dish, breast-side up. Boil chicken breast in a small pot. While the breast cooks, chop cilantro, dice onion and crush garlic. When the breast is cooked, remove from the water, cool and cut into small pieces. Mix the breast meat with cilantro, onion, garlic, mushrooms, breadcrumbs and soup powder. Stuff chicken breast mixture into the cavity of the whole chicken. Stir together the rest of the ingredients and spread on the outside of the chicken. Bake for 90 minutes or until chicken is golden and thigh juices run clear.
