Spiralized Cucumber and Cherry Tomato Salad

Spiralized Cucumber and Cherry Tomato Salad Related:   gluten-free, kid-friendly, North America, salads, Shabbat, vegan, vegetables & legumes, vegetarian

Yield: 4–6 servings

This recipe starts at your local farmers market. Arrive early for the best selection and buy every color tomato available and a few cucumbers. Of course, this salad can be chopped, but the spiralizer is lots of fun if you have one and works great with cucumbers.


  • 3 large cucumbers
  • 1 pound colorful tomatoes
  • 4 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt to taste
  • 1 tablespoon chopped parsley


  • Prep cucumbers for spiralizer and send through on medium setting (peeling is optional). Chop a variety of colorful tomatoes. Combine cucumbers and tomatoes in medium bowl. Whisk olive oil, lemon juice and salt together for dressing. Toss with salad and garnish with parsley.
