Spicy Tomato Sauce

This is a salsa-like sauce that is usually served alongside malawah. Torn pieces of malawah are used to scoop a bit of the sauce at a time. S’hug (s-hoog), a staple in Yemenite food, is a hot pepper sauce made from green or red chili peppers, garlic, cilantro and a spice mix.


  • 4 large ripe tomatoes, washed and dried
  • Salt to taste
  • 1 teaspoon s’hug (or to taste)
  • Cilantro to taste, chopped


  • Grate tomatoes, add other ingredients and mix.
