Panache’s Polo Shevid

Recipe courtesy of Rafi Hakimi, Panache Catering. Polo Shevid is a standard of Persian cooking and can be made with lima beans or other legumes as well as the peas in this recipe. Persians like their rice dry and take care to use a towel over the top of the pot while cooking to draw off any additional moisture.


  • 1 cup basmati rice
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 onion, finely diced
  • 2 shallots, finely diced
  • 3 cloves garlic, finely diced
  • 1 bag frozen peas
  • 1 bunch fresh dill, chopped


  • Begin by cooking the rice following the instructions on the bag. Heat up the olive oil in a pan over medium heat. Once hot, add the diced onion, shallots and garlic. Once the onions are soft and beginning to brown, add peas and dill. Cook covered for a few minutes until peas are tender. Mix seasoned peas into the rice until well incorporated, reserving 1 cup of pea mixture for garnishing the top. Arrange Polo Shevid on an oval platter and top with remaining pea mixture. Serve with kabobs, fish or roasted chicken.
