Orange Ginger Filling
This fruit filling is rich with flavors from India and makes a delicious variation for hamantashen or any filled cookie. Its sweetness is cut by an appealing bitterness from the cooked orange rinds.
- 2 cups water or juice from oranges
- 1 cup sugar
- Rinds of five medium oranges
- Juice of 1-2 oranges
- 2 inches fresh ginger, chopped
- Pinch of clove powder
- 1/4 teaspoon cinnamon
- Bring water or juice, sugar and orange rinds to a boil. Reduce heat to low and simmer for 30-40 minutes, stirring every 3-5 minutes, until the rinds become translucent. Add more liquid if needed as rinds cook down. Let cool, then combine with ginger, clove powder and cinnamon in food processor fitted with steel blade. Pulse just until mixture is shredded. Use 1 teaspoon of filling per hamantashen.
