Mixed Vegetable Masala

Cook time: 25-30 min

Yield: 3-5 servings as side dish

Once you get the hang of this recipe, you can use any vegetable combo you choose. Feel free to add or subtract spices for variations.


  • 3 tablespoons vegetable oil
  • 1 onion, chopped
  • 1 medium tomato, chopped
  • 3 cloves garlic, chopped
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder or to taste
  • 1 head cauliflower, chopped
  • 1 cup peas, fresh or frozen
  • 1 medium eggplant, chopped
  • 1/3 cup raisins
  • 1/2 cup water
  • 1/2 teaspoon whole cumin seeds
  • 4 whole cardamom pods
  • 5 cloves
  • 1 cinnamon stick
  • 1 teaspoon salt or to taste
  • Cilantro to taste, chopped


  • Heat the oil in a deep pan over medium heat. Add tomatoes, onions and powdered spices and sauté until onions are translucent. Then add vegetables, raisins, water, whole spices and salt. Cover pan and simmer until vegetables are soft, about 15 minutes. Garnish with cilantro and serve over rice.
