Harvest Knees

Yield: 1 cocktail

A twist on the classic bee’s knees cocktail, this version has an extra fall-flavored twist in the form of warm spices including cinnamon, cloves and star anise.


  • 2 ounces fall-spiced honey reduction*
  • 1½ ounces gin
  • 1 ounce lemon juice
  • 1 dash lavender bitters
  • Garnish: Honeycomb, lavender leaves


  • Pour ingredients into a mixer with ice. Shake. Strain into a coupe glass. Garnish with a piece of honeycomb and lavender leaves.
  • * To make the honey reduction, combine equal parts (about ½ cup each) honey and water and 1 cinnamon stick, 1 to 3 star anise, 3 to 4 cloves, a pinch of coriander seed and a pinch of whole allspice. Simmer together until honey is dissolved. Cool and strain. Then reduce to one-third. Cool and use this reduction in the cocktail. You can double the recipe as needed.
