At last summer’s White House Kitchen Garden Harvest, the First Lady and kids from Let’s Move! programs prepared this nutritious and delicious tasting meal. Try it at home!

Ingredients

  • 6 chicken breasts
  • 1 tablespoon scallion, chopped
  • Zest of 1 lemon
  • 1 teaspoon garlic, chopped
  • 1 tablespoon honey
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons canola oil
  • Salt and pepper to taste
  • 1 (8- or 10-ounce) package soba noodles
  • 2 pounds assorted garden greens, such as arugula, kale, endive, tatsoi and baby spinach
  • 1 pound assorted garden vegetables, such as radishes, snow/snap peas, broccoli, fennel, kohlrabi
  • Vinaigrette
  • ½ cup rice vinegar
  • Juice of 2 lemons
  • 1 tablespoon Dijon mustard
  • 1 shallot, finely minced
  • 1 tablespoon scallion, chopped
  • 1 tablespoon ginger, minced
  • 2 tablespoons low-sodium soy sauce
  • ¾ cup canola oil
  • 2 tablespoons honey
  • Salt and pepper to taste

Preparation

  • Marinate chicken with scallion, lemon zest, chopped garlic, honey, soy sauce and canola oil. Season with salt and pepper. Heat a grill or a grill pan over the stove. Cook chicken pieces for about 5 minutes, then flip and cook for another 5 minutes, or until cooked through. Set aside to rest. Then slice thinly.
  • Bring water to a boil in a large pot. Add soba noodles and cook for 4 to 6 minutes until al dente. Drain and rinse to prevent sticking. Set aside.
  • Wash greens and spin dry. Slice the garden vegetables into ¼-inch slices. Set aside.
  • To make the vinaigrette, place all ingredients in a bowl except the canola oil. Slowly whisk the canola oil into mixture until emulsified. Chill until ready to serve.
  • In a large bowl, mix all the components until well incorporated. Serve immediately.
