Fried Honey Banana Matzah with Ricotta

Frying bananas in honey brings out their natural sweetness and caramelizes them for maximum delectability. Paired with a thick swipe of ricotta and (if you eat kitniyot) a drizzle of tahini, this is dessert passing for breakfast.


  • 1 tablespoon butter
  • 2 bananas, sliced
  • 1 sheet of matzah, cut in half
  • 3 tablespoons whole-milk ricotta
  • 1 tablespoon honey
  • 1 tablespoon tahini (optional, if you eat kitniyot)


  • Melt the butter in a small skillet over medium heat. Watching the butter carefully until it starts to bubble and then brown, add the bananas and stir so they are all covered in butter. While the bananas are cooking, spread the ricotta generously on the matzah. Flip the bananas and cook until they are nicely brown and caramelized. When the bananas are cooked, turn off the heat and stir in the honey. Top the matzah with the bananas and drizzle the tahini on top, if using.
