Florence Golden’s Apple Cake

Yield: 12-15 servings


  • 3 Granny Smith apples, peeled and sliced thinly
  • 2 cups plus 5 tablespoons sugar, divided
  • 2 tablespoons cinnamon
  • 4 eggs
  • 1 cup oil
  • ¼ cup orange juice
  • 2½ teaspoons vanilla
  • 3 cups flour
  • 3 teaspoons baking powder
  • ½ teaspoon salt


  • Preheat the oven to 350 degrees and grease a 10-inch tube pan. Mix together apples, 5 tablespoons sugar and cinnamon in a medium size bowl and then set aside. Beat eggs, remaining 2 cups of sugar, oil, orange juice and vanilla together in a large bowl until smooth. In a separate bowl, measure out and combine the flour, baking powder and salt. Slowly add the dry ingredients to the wet mixture in the large bowl. Beat batter until smooth.
  • Pour half of the batter into the pan. Then, add a layer of the apple, sugar and cinnamon mixture on top of the batter, reserving a few apple slices to garnish the top. Pour remaining batter on top of the apple mixture and arrange the reserved apple slices. Bake for 1 hour and 20 minutes or until a toothpick poked into the center comes out clean.
