Couscous Tabouli Salad

Couscous Tabouli Salad Related:   low-fat, vegetarian

Prep time: 20 min

Cook time: 10 min

Yield: 4-6 servings


  • 3/4 cup Moroccan couscous
  • 1 red onion, finely chopped
  • 1 large bunch flat parsley, chopped
  • 3 Roma tomatoes, cut into small cubes
  • 1/4 cup green onions, chopped small
  • 1 tablespoon garlic, minced
  • 1 large bunch cilantro or mint leaves
  • 1/2 cup extra virgin olive oil
  • 1/3 cup fresh lemon juice
  • 1 teaspoon kosher salt
  • ground pepper to taste


Cover pot with wet towel until cool. This keeps the couscous moist. Combine salad ingredients, red onion through cilantro or mint, in medium bowl. In a separate bowl, whisk together the rest of the ingredients for the dressing and pour over the salad. Sprinkle a pinch of paprika for color before serving. Serve cold or at room temperature.
