Chocolate Bean Brownies

Free of refined sugar, nuts, grains, dairy and gluten, these brownies are a surprising crowd pleaser. No one will guess the fudgy and dense delights are pack full of protein from all those beans!

Ingredients

  • 1 can black beans, rinsed
  • 4 eggs
  • 1/3 cup + 1 tablespoon warm water
  • 2 tablespoons flax seed meal
  • 1 teaspoon vanilla stevia
  • 2 teaspoons vanilla extract
  • ¼ cup raw honey
  • ¼ cup coconut oil, melted
  • 1/3 cup cocoa powder
  • ½ teaspoon salt
  • 2 teaspoons baking soda
  • 1/3 cup chocolate chunks

Preparation

  • Preheat the oven to 325 degrees. Line an 8x8-inch pan with parchment paper.
  • Mix the water into the flax seed meal to form a gel. Puree the flax meal gel along with the beans, eggs, stevia, vanilla extract and raw honey in a food processor until combined well. You may need to scrape the sides down a few times. Add the remaining ingredients, except the chocolate chunks, one at a time and puree until completely combined. Fold in the chocolate chunks. Pour the batter into the pan. Bake for 30 minutes, or until a toothpick comes out clean.
