There is so much to love about Chanukah: the food, the music, the candles and the time spent together as a family all make it such a special time of year. But…it’s also an easy time of year to find your family feasting on some less-than-nutritious foods. With a few quick updates to the traditional latke recipe, you can make sure your children are enjoying the tastes of Chanukah while still providing important nutrients in their diets.
This recipe is simple and healthy and will delight both children and adults. In place of potatoes, I use mashed cauliflower, and rather than frying the latkes, they are baked. Sour cream is replaced with Greek yogurt, which is a great source of protein. And because they use only four ingredients, you can whip them up in a matter of minutes, throw them in the oven and, instead of slaving over a hot stove, spend some quality time with your family while the smell of delicious latkes fills the air.
