Tahini Apple Cake
Add this cake to your menu for any holiday or Shabbat for an Israeli touch. Deceptively simple to make, the cake’s rich flavor will please any vegan and yet it’s also the perfect complement to a meat meal.
- 1 cup tahini
- 1 cup sugar
- 1½ cups flour
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 1 cup chopped walnuts
- 1¼ cup apples, peeled and diced (about 2 small apples)
- 1 cup plus 1 tablespoon orange juice
- 1 teaspoon vanilla
- Powdered sugar for dusting (optional)
- Preheat oven to 350 degrees. Grease and flour a 9-inch round pan. In a large bowl, mix tahini and sugar using an electric mixer or a wooden spoon. In a separate bowl, stir together flour, baking soda, cinnamon, walnuts and diced apples. Combine orange juice and vanilla in a small bowl. Add half of the flour mixture to the tahini and sugar and stir. Add half of wet mixture and stir. Add remaining flour mixture and orange juice and stir until evenly combined. Pour the batter into pan and bake about 45 minutes to 1 hour, until golden and baked through. Cool and dust with powdered sugar if desired.
